Masoor Dal & Crunchy Vegetable Salad

Ingredients & what makes them so good for you:

  • Masoor Dal (pink lentils): Whole masoor dal is very rich in protein, fiber and iron. Using it whole is more nutritious (it’s greenish brown in colour when whole). Masoor dal contain contains low-fat proteins which means they’re important for growing, building, repairing and maintaining tissues in the blood, bone, skin and muscle cells.
  • Carrots: As you probably already know, carrots are very rich in eye-friendly vitamin A, but it is also rich is dietary fiber, antioxidants and minerals. It also contains vitamins B3, B6, B9 and potassium. 
  • Cucumbers: Contain fiber, minerals, and vitamins B and C. Like bananas, cucumbers are rich in potassium which is so lacking in many people’s diets, especially with regards to the ratio of sodium to potassium as most people’s diets have too much sodium and not enough potassium. Clinical studies clearly show that if you get twice as much potassium in your diet as sodium, you decrease the risk of dying of heart disease by 50%.
  • Almonds (soaked): Almonds are the only highly alkaline (as opposed to acidic) nuts and are considered the healthiest nuts you can buy.  They’re a powerhouse of nutrients like potassium, calcium, magnesium, folic acid, riboflavin, phosphorus, fiber and vitamin E. Almost 20% of almond’s weight is protein. Almond oil is one of the best oils for skin. Soaking almonds 8-10 hours makes them a lot more bioavailable and increases their nutritional content. Almonds, which are very rich in phytosterols (plant sterols), are a great way to also lower your “bad” LDL cholesterol and thus reduce your chances of heart disease.
  • Green Papaya:  The fiber-rich fruit was liked so much by Christopher Columbus that he called it the “fruit of the angels”. Green papaya an excellent yet much overlooked ingredient in salads. It’s also rich in enzymes which help you better digest food. These enzymes are much more concentrated in green papayas than in ripe ones. Papayas are also rich in vitamin C, vitamin A, and heart-friendly potassium. Green papayas are also rich in folic acid (vitamin B9) which naturally reduces a substance in the body called homocysteine. Those with elevated levels of homocysteine have a much higher risk of a heart attack or stroke.
  • Mixed Sprouts: Sprouts are considered a  “superfood” because of their high nutritional qualities. Loaded with protein, fiber, iron, calcium and other nutrients. They’re also high in vitamin K which is very important for heart and bone health. Vitamin K is vital for signaling to the body “calcify bones, but not arteries”. Without vitamin K calcium can be deposited into the arteries, causing hardening of the arteries and heart attacks, instead of being deposited into the bones which need the calcium!
  • Ginger:  Ginger is a good source of antioxidants. It aids in digestion and circulation.
  • Raisin:. Used in moderation, raisins are not only delicious but also a source of iron and have more potassium, per serving, than bananas.
  • Coriander (Cilantro): A good source of vitamin K which is important for heart & bone health
  • Coorg Chili Peppers: These are not just hot but also have a wonderful flavor. They have lots of vitamin C and antioxidants. Due to its capsaicin content Coorg and other chilies have shown some ability to destroy cancer cells (for example prostate cancer).
  • Lemon:  Not just a superb source of vitamin C! Adding a squeeze of lemon or lime to water makes it alkaline-forming, despite the fact that they are acidic to taste. This is because the pH nature of limes and lemons changes during the body’s metabolic process from acidic to alkaline and having most of the foods in your diet alkaline-forming (fruits, vegetables, etc.), as opposed to acid-forming, is very good for your health. Limes, lemons & watermelons, as different as they seem from one another, are the most alkaline-forming among all the fruits! On the opposite end of the spectrum, some of the most acidic foods are: soft drinks (of any kind), vinegar, artificial sweeteners, sugar, white flour, etc. and these need to be eliminated or minimized in your diet to stay healthy. The worst of these are soft drinks – they provide not only a huge amount of “empty calories” and sugar but are also some of the most acid-forming foods you can ever eat. Limes and lemons are loaded with vitamin C and very high in flavonoid glycosides and limonoids – very powerful antioxidants which help fight free radicals which cause DNA damage, faster aging of the body and even cancer. Interestingly enough, one of the glycoside antioxidants in lemons/limes, called hesperidin, is named after Hesperides, an orchard of the ancient goddess Hera (wife of Zeus) who, in ancient Greek mythology, grew there immortality-giving apples!
