Eggplant: A versatile and tasty vegetable, eggplants are full of B-vitamins as well as some important minerals such as magnesium which is very important for the maintaining a strong immune system helping us fight bacterial and viral infections. Magnesium is also crucial for

the health for our heart health and helps to ensure regular heartbeat. Eggplants are also rich in vital minerals manganese and potassium. Eggplants exhibit high antioxidant activity, and according to the U.S. Department of Agriculture, are especially rich in 2 particular types of antioxidants, with unique properties, called chlorogenic acid and nasunin (found in the peel of eggplants). They have both been proven in clinical tests to have very strong ability to fight free radicals in our bodies which can cause premature aging, heart disease, inflammation and DNA damage which can lead to cell mutations. Substances which help to prevent cell mutations are called antimutagenic and it means they help to prevent cells from mutating into cancer cells and thus prevent cancer. The fiber in eggplants (and other fiber-rich vegetables), helps to keep our cholesterol levels in check and ultimately prevent heart disease and stroke according to University of Maryland (US).
